Strawberry Daiquiri Rice Pudding

Ingredients

1 cup Adolphus® White Rice
2 cups milk
1 pint fresh strawberries, washed and hulled
3/4 cup sugar, divided
1/4 cup lime juice
1/4 cup rum
fresh strawberries, sliced
lime slices, for garnish

Cooking Directions

Prepare rice as per package directions.

Add milk and 1/2 cup sugar to cooked rice and simmer over medium-low heat 20 minutes, until thick and creamy, stirring occasionally.  Meanwhile in a blender or food processor, puree strawberries with remaining sugar.  Add lime juice and rum.  Stir strawberry mixture into rice pudding.  Spoon into dessert dishes and refrigerate until chilled.  Serve garnished with strawberries and lime wheels.

Tip:  Substitute 8 ounces frozen strawberries, thawed for the fresh strawberries.
